The process of Ellei brewing is long and complicated. The first thing to start with is the choice of ingredients. Only high quality malt of the best world producers, several sorts of excellent hops, produced by leaders of the business in Germany, unique brewer's yeast from yeast banks of Berlin Brewing Institute form the basis of different sorts of Ellei beer.

The second stage is preparation of water. The Lena water goes through several levels of treatment before it is used for brewing.
Brewing technology consists of several stages: wort production, fermentation and beer maturing, filtration and bottling.

To produce wort, it is first moistened and broken to pieces in a special crusher; for the attainment of the optimum grade which consists of several stages.

Then crushed malt is mixed with prepared water in certain proportions, and then it is aged in different temperatures for certain periods of time. In brewing it is called malt mashing. In our brewery this process is automated under a control of a specialist. It is very important because during malt mashing all necessary substances in malt turn into a solute condition. Then mashed malt is either filtered or divided into a liquid part, which is called wort, and a solid one, which is used as fodder. During the next stage wort is boiled with hops, which gives the beer the necessary aroma and pleasant bitterness associated with different hops.

After brewing ready beer wort is cooled down till the temperature necessary for barm. During fermentation, which is 21 days long, ready beer gains its final taste, strength and aroma peculiar to Ellei beer.

All processes of brewing and fermentation are held under a close control of a laboratory and meet all the conditions of a classical technology.
Before beer is bottled in 1 and 2 liter bottles and barrels it is filtered twice which gives the beer its clarity and stability.

Besides that there is also draft Ellei. Draft beer, or as they say “live” beer differs from the usual one with an increased number of yeast plants, which contain a complete amount of B vitamins, folic acid, amino acids and micro elements. Beer is very health-giving, slakes thirst, improves metabolism, regulates a gastrointestinal tract and cardiovascular system, and relieves stress.


That is why drinking draft beer is good for your health. Shelf life of beer is 3 days and it can be sold only on site. Draft beer is the choice of the real experts.
